In the heart of summer, we’re always looking for ways to use super ripe peaches that may have gotten way from us, and this quick and easy iced tea is one of the most refreshing. Adjust the sweetness depending on the sweetness of your peaches, and don’t be afraid to use the same technique with other fruit, like raspberries!
- 4 ripe peaches, pitted and roughly chopped
- 1/4 cup sugar
- 1 cup water
- 10 large mint leaves
- 6 cups brewed iced tea
- In a medium saucepan, combine the peaches, sugar, and water. Bring to a simmer, cover, and cook until the peaches are very soft, about 15 minutes. Remove from the heat, add the mint, and set aside to cool.
- Transfer the mixture to a blender and purée until very smooth.
- To serve, stir peach purée to taste into a glass of iced tea and serve over ice. Cover and refrigerate any leftover peach purée.
