Tart Cherries in Bourbon

Makes about 5 cups

These easy to prepare cherries are a staple of a well-stocked home bar, but they also make amazing gifts. Use the cherries in your cocktails, but don’t forget the flavorful brandy for drinks, soaking cakes, or rehydrating raisins and other dried fruits for holiday baking.

Ingredients

  • 2 1/2 cups (about 1 lb) pitted tart cherries
  • 1 cup sugar
  • 1 to 2 cups bourbon (enough to completely cover cherries in your jar or jars)

Directions

  1. Combine cherries and sugar in a bowl.
  2. Spoon the cherry mixture into a glass canning jar with a tight-fitting lid that is large enough to hold all of the cherries in the bottom half. You can also use smaller jars filled up halfway.
  3. Pour in enough bourbon to completely cover the cherries.
  4. Cover the jar or jars with the lids and place in the refrigerator.
  5. Allow the cherries to soak in the bourbon for about 6 weeks.
