Makes 3/4 cup
Ingredients
- 1 cinnamon stick, broken into pieces
- 2 dry bay leaves
- 1/4 cup cumin seeds
- 1/3 cup coriander seeds
- 1 tablespoon green cardamom pods
- 1 tablespoon black peppercorns
- 2 teaspoons whole cloves
- 1 dried red chile
- Pinch of ground mace
Directions
- In a dry skillet over medium-high heat, combine the cinnamon, bay leaves, cumin, coriander, cardamom, peppercorns, cloves, and red chile. Toast, stirring constantly, until the cumin seeds turn uniformly brown, 4 to 5 minutes.
- Remove from the heat and transfer to a bowl to cool.
- Transfer the cooled spices to a spice grinder or mortar and pestle. Grind the mixture to a powder.
- Cover and store in a cool, dry space.
