Garam masala

Makes 3/4 cup

Ingredients

  • 1 cinnamon stick, broken into pieces
  • 2 dry bay leaves
  • 1/4 cup cumin seeds
  • 1/3 cup coriander seeds
  • 1 tablespoon green cardamom pods
  • 1 tablespoon black peppercorns
  • 2 teaspoons whole cloves
  • 1 dried red chile
  • Pinch of ground mace

Directions

  1. In a dry skillet over medium-high heat, combine the cinnamon, bay leaves, cumin, coriander, cardamom, peppercorns, cloves, and red chile. Toast, stirring constantly, until the cumin seeds turn uniformly brown, 4 to 5 minutes.
  2. Remove from the heat and transfer to a bowl to cool.
  3. Transfer the cooled spices to a spice grinder or mortar and pestle. Grind the mixture to a powder.
  4. Cover and store in a cool, dry space.
