Lime Agua Fresca with Chia Seeds

Makes 8 servings

Chia seeds add an interesting texture to this refreshing agua fresca, but you can leave them out if you don't have any on hand. Just be sure to add water to make up the difference.

Ingredients

  • 1/4 cup (2 oz) chia seeds
  • 1/2 cup sugar
  • 2 quarts water, divided use
  • 1/2 cup lime juice

Directions

  1. Heat one quart of the water until it is warm, about 100°F. Soak the chia seeds in the warm water for 10 minutes.
  2. Combine the sugar and 1 cup of the remaining water and simmer to dissolve the sugar. Add the remaining 3 cups of water and the lime juice. Add this liquid to the water with the soaked chia seeds and refrigerate until very cold. Serve well chilled but not over ice.
