If one is great, how good would they be combined!?

This Valentine’s Day, if you want to bake something for a special person – maybe your grandma, your brothers and sisters, or for friends at a Valentine’s Day party – you should try this Fudgy Walnut Brownie Pie.

For starters, it has a cookie crumb crust. So, think graham cracker crust that you might see on a cheesecake or a key lime pie. But this time, we use chocolate wafer cookies. You can find those at the store, but if you have trouble finding them, you can use the cookie portion of a chocolate sandwich cookie. Make sure you remove the filling before you grind them up (what you do with it is your business!). To grind the crumbs, you can use a food processor, or you can place the cookies in a zip-top plastic bag and then gently smash the bag with a rolling pin. Don’t have too much fun!

From there, you add brownie batter, and when it’s baked, it will be fudgy, gooey, and super chocolatey. We put walnuts in ours, but you can use whatever nut you like –hazelnuts, peanuts, pecans – or leave them out completely.

Add mix-ins, if you want, like raisins or crushed toffee. And since it’s Valentine’s Day, don’t be afraid to decorate! You can top it with pink sprinkles or drizzled white chocolate that is colored red or pink. Do whatever will make your Valentine happiest.

If you think this pie can’t get any better, then you obviously forgot about ICE CREAM. Top a slice of pie with a scoop of your favorite flavor of ice cream. We love classic vanilla, but for Valentine’s Day, you could serve it with strawberry, black raspberry, or, of course, more chocolate.
