Caipirinha - the national cocktail of Brazil made with lime juice, sugar, and cachaca.

Yields 8 portions

Ingredients

  • 16 limes
  • 1 cup sugar
  • 2 cups cachaça
  • Crushed ice, as needed
  • 1 lime, thinly sliced

Directions

  1. Cut the limes in half lengthwise, remove the white pith in the center, and cut into wedges. Divide the limes and sugar between 8 cocktail glasses and, using a wooden pestle or similar tool, crush the sugar and limes together until the sugar dissolves.
  2. Add 2 fl oz of cachaça to each glass. Fill each glass with ice and cover with the lid of a cocktail shaker. Vigorously shake each cocktail individually for several seconds and strain the contents into a new glass.
  3. Garnish with a lime wedge and serve immediately.
