Tides of Taste: A Voyage Through the World’s Coastal Cuisines

The Culinary Institute of America and this summer’s senior capstone class invite you to step aboard a smooth-sailing evening of candlelight, coastal charm, and timeless elegance. Tides of Taste will transform Farquharson Hall into the evocative grandeur and elegant luxury of an ocean liner, taking you on a global gastronomic voyage inspired by the world’s most vibrant seashores. Throughout the evening, guests will be captivated by invigorating oceanic blues, sand tones, crisp whites, and pops of color that capture the romance of seaside travel.
Crafted by CIA students, the evening’s menu will celebrate refined seasonal flavors, contemporary technique, and elevated presentation. Mediterranean, Asian, and Latin American influences will come together through artfully composed hors d’oeuvres, edible transformations, and thoughtfully curated tasting portions, alongside carefully designed vegan and allergen-conscious alternatives. Each dish will highlight the creativity and artistry achievable through locally inspired ingredients, with every bite and sip designed to spark conversation, evoke personal memories, and inspire dreams of future adventures across the globe.
Beyond celebrating exquisite cuisine, this voyage sails with a profound purpose. Proceeds will benefit the Professor Raimundo Gaby ’97 Legacy Scholarship and the Cystic Fibrosis Foundation, causes deeply close to our hearts, as one of our own senior classmates lives with this genetic disease. Your attendance directly supports vital research advancing treatments and pursuing a cure, transforming an evening of fine dining into a meaningful wave of hope and support.

Dress Code: Summer yacht formal.
Inspiration for Women: Embrace high-seas evening elegance in formal evening wear, such as flowing dresses, elegant skirts with blouses, or tailored jumpsuits. Complete the look with block heels or kitten heels, and some pearl or gold jewelry.
Inspiration for Men: Channel Riviera sophistication in a classic dinner jacket paired with a crisp dress shirt, or a sharp summer suit in light fabrics. Complete the look with polished loafers or leather dress shoes, a bow tie or knit silk tie, and a classic statement timepiece.
Non-Gender Conforming: Guests are encouraged to mix and match styling elements in whatever way feels most authentic and celebratory.
Entertainment: Guests will enjoy a DJ playing a curated playlist inspired by the coastal destinations represented throughout the evening’s culinary experience. A raffle will also take place during the event to raise funds for the causes.
Price: $135 per person, including all food, beverages, entertainment, service, and taxes. A portion may be tax-deductible.
