At the Culinary Institute of America, we teach foundational recipes that can be endlessly adapted once you’ve mastered the basics.
We’re sharing four ways to take CIA classics and give them a fresh twist—whether you’re looking to use up leftovers, stretch ingredients, or just add a little fun to your weekly routine.
CIA All-Butter Pie Dough → Savory Vegetable Tart with Goat Cheese
You already love this dough for your apple pies and summer galettes—but it’s also your new best friend for a savory dinner tart.
- Remix It: Roll out the dough and press it into a tart pan (or keep it rustic and freeform). Fill it with roasted seasonal vegetables—like zucchini, eggplant, or butternut squash—along with a swipe of herbed goat cheese or ricotta. Bake until golden and serve warm or room temperature with a side salad.
- Why It Works: The buttery, flaky crust is the perfect canvas for whatever vegetables are in your fridge. Plus, it feels fancy without any fuss.
CIA Big-Batch Chili → Chili-Stuffed Sweet Potatoes with Lime Crema
We all know the CIA chili recipe makes a generous amount—so why not stretch it into a second meal that feels totally new?
- Remix It: Roast halved sweet potatoes until tender. Split them open and stuff with warmed chili. Top with a quick lime crema (sour cream + lime juice + a pinch of salt), chopped green onions, and a few tortilla chips for crunch.
- Why It Works: The natural sweetness of the potato pairs beautifully with the spices in the chili, and the crema adds brightness. It’s an easy, satisfying lunch or weeknight dinner.
CIA Roasted Chicken → Vietnamese-Inspired Banh Mi Bowls
The CIA’s roast chicken technique gives you crispy skin and juicy meat—but once you’ve had it straight from the oven, use the leftovers to build something globally inspired.
- Remix It: Layer rice or vermicelli noodles with shredded chicken, pickled carrots and daikon (or quick-pickled cucumbers), cilantro, jalapeño, and a drizzle of spicy mayo or nuoc cham. Bonus if you toss in some crushed peanuts.
- Why It Works: It’s colorful, fresh, and packed with texture—and you don’t need to turn on the oven. This remix also works beautifully with rotisserie chicken or poached thighs.
CIA Risotto → Crispy Risotto Cakes with Soft Eggs and Greens
If you’ve ever made a pot of risotto, you know the leftovers can seize up in the fridge. But that’s not a bug—it’s a feature!
- Remix It: Form chilled risotto into patties, coat lightly with breadcrumbs (or not), and pan-fry until crispy on both sides. Serve with a runny poached or fried egg and a handful of peppery greens.
- Why It Works: You get all the rich, creamy flavor of the original risotto, but with crispy edges and new textures. It turns last night’s dinner into an elegant brunch or light supper.
The beauty of these remixes is that they don’t require starting from zero. With a few pantry staples and a little imagination, you can stretch one recipe into multiple meals—and keep your kitchen routine exciting without overwhelming your weeknight schedule.
