Makes 3 cups
Serve this purée as a dip, alongside spring veggies, crusty bread, or toasted pitas, or as a sauce for grilled fish or roasted chicken.
Ingredients
- 2 lb fresh fava beans
 - 1 cup olive oil
 - Juice of 1 lemon
 - Salt, to taste
 - Freshly ground black pepper, to taste
 
Directions
- Remove the fava beans from their pods, and remove the membrane surrounding each bean.
 - After you have squeezed all the favas out of their skins, place them in a blender. Add the olive oil and blend on high until very smooth. Season with lemon juice, salt, and pepper.
 - Serve with fresh pita as a dip, or serve as a side vegetable with dinner.
