Makes 4 to 6 servings
Baked sardines is a typical preparation in many regions in Italy, and the flavors included in this recipe are typical for the southern cuisine. Enjoy with a glass of wine, if you like. Medium bodied whites or light- to medium-bodied sparklers will pair beautifully.
Ingredients
- 20 sardines (about 2 1/2 lb)
 - 1/4 cup extra-virgin olive oil
 - 4 plum tomatoes, peeled, seeded, and diced
 - Kosher salt, as needed
 - 1 cup plain dry bread crumbs
 - 1 teaspoon dried oregano
 - 3 tablespoons chopped flat-leaf parsley leaves
 - 1 garlic clove, finely chopped
 - 2 tablespoons pecorino
 - 2 tablespoons white wine
 
Directions
- Preheat the oven to 400°F.
 - Clean the sardines and remove the heads if you prefer. Rinse and dry the sardines, and place them in a baking dish large enough to perfectly fit all the sardines in one layer. Drizzle with the extra-virgin olive oil and sprinkle with the diced tomatoes. Season with salt.
 - Mix the bread crumbs with the oregano, parsley, garlic, and cheese. Moisten the bread crumb mixture with the white wine and sprinkle all over the sardines.
 - Bake until the sardines are cooked and the bread crumbs are crisp and golden, about 10 minutes. Serve hot.
